PFAS, short for perfluoroalkyl and polyfluoroalkyl substances, are commonly referred to as “forever chemicals” by consumers. This vast group of synthetic compounds, favored by the food industry for their excellent grease and water repellent properties, poses a significant issue as they do not break down in the environment. Consequently, they persist in the environment, accumulate in our bodies, and are believed to have detrimental effects on health.

The entry of PFAS into the food supply chain occurs through two primary routes. Firstly, environmental contamination through industrial activities and firefighting foam leads to groundwater pollution, which then contaminates crops consumed by animals like dairy, meat, eggs, and seafood. Secondly, PFAS-coated packaging can transfer these chemicals into food, especially when heated, presenting a less than appealing scenario for consumers.

The health implications of PFAS exposure are concerning, with research linking higher levels to compromised immune systems, elevated cholesterol, thyroid disorders, and pregnancy complications, particularly affecting children. Given their prolonged presence in the bloodstream, addressing this issue is not a one-time fix.

Regulatory efforts are underway, but the landscape is complex. While the FDA has halted the introduction of new PFAS-based packaging since early 2024, the focus has now shifted to regulating PFAS levels already present in food. Legal action is being taken to establish concrete limits for various food items like lettuce, eggs, and salmon, with a court-mandated deadline of June 2026. Meanwhile, individual states are enacting their own bans and restrictions, requiring companies operating across multiple states to navigate a web of regulations.

Despite the challenges, there are positive developments. FDA tests have shown that over 95% of everyday foods contain undetectable levels of PFAS, with seafood being a notable exception. Furthermore, the phase-out of grease-proofing packaging chemicals between 2024 and 2025 signifies progress. The current focus is on pressuring the FDA to set enforceable limits for PFAS in food, driven by legal deadlines and varying state regulations on packaging.

For food businesses, addressing PFAS contamination in ingredients is the emerging priority, as packaging concerns have largely been addressed. Proactive steps, such as mapping supply chains and testing high-risk raw materials, are advisable to stay ahead of the curve rather than waiting for regulatory mandates.
